Every day, a photograph, a poem. A few year’s back we attended the baptism of our granddaughter. The celebration afterwards included this delicious curry vegetable soup. Allison emailed us the recipe from her friend in the church, and we’ve been enjoying it ever since– summer or winter. It’s delicious, and I’m so grateful for this food we eat, the friend who shared, and Allison, granddaughter, daughter, sister, mother, wife, auntie, cousin, and a wonder of the world.

And so, a poem:

Color of Grateful

Poppy of tomatoes
Ever of green beans
Sunshine of corn

Fires of peppers
Calm of garbanzo
Rainbow warm

Harvest with thanks
Serve with love
In winter’s storm.

Curry Veggie Soup Recipe 
from Allison’s friend

2 cans garbanzo beans
2 cans diced tomatoes
32 oz vegetable broth
One red onion, diced
2 tbsp Garlic
2 tbsp Ginger 
2 tbsp coconut oil
1 package super food veggies or whatever vegetables you like
1 can coconut cream, extra creamy
3 tbsp+ curry powder
Salt
Pepper

Add oil to pan.
Add diced veggies, garlic, ginger, and onion.   Salt veggies.  Cook until onions are translucent and veggies are softened.
Add tomatoes and curry.  Cook 5 minutes.
Add broth and coconut cream.
Heat to simmer.
Add garbanzos. 


Cook for 30 to 40 minutes.
Salt to taste.
